Most people know that the “angel’s share” is whisky lost to evaporation from the barrels. However, many have never heard of the “devil’s cut” which is whisky that is captured by the wood of the barrels, and until recently, never seen again. Defiant Devil’s Cut is a mixture of our 100% Malted Rye and American Single Malt Whiskies that have been coaxed out of the barrels and spirals we use in our maturation process. Found by accident while storing our used spirals, the extracted liquids formed a dark whisky with a taste profile of heavy oak, toasted chestnuts and apricot. This unique whisky will change at the time of bottling on every occasion. The proof and flavor profile will always be similar, but never quite the same. The Santer is comprised of 80% American Single Malt and 20% Malted Rye with a high toast American white oak. The Santer is matured and aged in Alligator Charred French Oak. Notes of chocolate, vanilla, and leather combined with hints of nutmeg and buffalo grass.
